Ingredients
  

  • 2 cups All-purpose flour
  • 1 cup Cornmeal
  • 1 cup Sugar You can also substitute part of the sugar with honey or maple syrup for a different flavor!
  • 1/2 cup Butter Melted
  • 1/2 cup Oil
  • 1 tsp Salt
  • 1.5 tsp Baking powder
  • 3 Eggs
  • 1 cup milk

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a baking dish or line it with parchment paper.

  2. Mix Dry Ingredients in an a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir it well.

  3. Now mix the liquid ingredients in another bowl, whisk eggs, melted butter, milk and oil until smooth.

  4. Gradually, combine the liquid mixture into the dry and mix it until just combined (do not overmix).

  5. Now pour the batter into your prepared baking dish. Bake it for 30 minutes or until the top is golden and a toothpick comes out clean.

  6. Let it cool slightly before slicing. Serve with butter, honey or enjoy it plain.
